Vegan Fudgy Brownie recipe



This is my go-to brownie recipe because it is super healthy and super tasty. We probably make these once a week. They go great with my homemade ice cream recipe here.


Ingredients:

1 flax egg

1/3 cup peanut butter

1/2 cup maple syrup

1 tsp apple cider vinegar

1 cup non dairy milk

1.5 cup oat flour

1/2 cup almond flour

1/4 cup cacao powder

1 tsp baking powder

1/4 tsp salt

1/2 cup non dairy chocolate chips


Instructions:

  1. Preheat oven to 375F.

  2. Mix 1 TB flax meal with 3 TB water in a little bowl. Set aside for 5 minutes.

  3. Mix the non-dairy milk and apple cider vinegar together in a separate bowl, set aside for 5 minutes.

  4. Combine all wet ingredients and mix well in a bowl. Make sure to add in the flax and apple cider milk combo.

  5. Combine all dry ingredients and mix in a separate bowl.

  6. Mix the dry ingredients in with the wet ingredients.

  7. Add mixture to a greased brownie pan & bake for 25 minutes. Stick a toothpick in the center, and if it comes out clean, it's ready!
