These are my absolute favorite cookies to eat. I usually add vanilla ice cream with my homemade recipe here for a delicious dessert! Also they are decently healthy and aren't overly sweet - so a huge win in my book!
Ingredients:
1 Flax Egg (1TB flaxseed meal + 3TB Water)
1/4 Cup Solid Coconut Oil
1/2 Cup Coconut Sugar (or brown sugar)
1 Tsp Vanilla Extract
3/4 Cup Oat Flour (blended oats)
1/2 Cup Rolled Oats
1/2 Cup Shredded Coconut
1/2 Tsp Baking Soda
1/4 Tsp Salt
1/2 Cup Vegan Chocolate Chips
Sea Salt Flakes
Instructions:
Preheat oven to 350F. Line a baking sheet with parchment paper.
In small bowl mix flaxseed meal & water to create a flax egg. Let sit for 5 minutes.
Add flax egg, coconut oil, coconut sugar, and vanilla extract to a medium mixing bowl. Whisk until smooth.
Add oat flour, rolled oats, shredded coconut, baking soda and salt to the same bowl. Mix together.
Fold in chocolate chips.
Add enough dough into your hand to form a 3 inch cookie. Press down onto cookie sheet.
Space cookies about 2 inches apart. This should make 12 cookies.
Bake for 10-12 minutes until edges are golden brown.
Take cookies out of oven and sprinkle sea salt flakes on top.
Let cool for 15 minutes before taking off the pan.
