This is my absolute favorite lunch (besides sushi!) and it is so filling, delicious, and so good for you. The crunch of the veggies and the flavor of the tofu pairs perfectly with the sauce. You will love it!
Ingredients:
1 block tofu, cut into cubes
1 tsp avocado oil
1 Bunch of Broccolini, chopped into bite size pieces
1 tsp toasted sesame oil
1 Cup Frozen Edamame
1 Carrot, sliced
1 Red Bell Pepper, sliced
1/2 cup red cabbage, sliced
2 cups cooked rice (brown or sushi)
1/4 cup tamari or soy sauce
1 TB maple syrup
1 TB sriracha
Instructions:
Prepare rice per bag instructions or with rice maker.
Slice and chop veggies.
Add cubed tofu to a pan with 1 tsp avocado oil. Fry until each side is crispy. Put in a bowl and set aside.
Add broccolini to the same pan and add 1 tsp toasted sesame oil. Fry until slightly browned. Add salt & pepper to taste.
Add edamame into a bowl with hot water, let sit until thawed.
Now we will prepare the 2 bowls.
Take cooked rice and add it to 1/4 of the bowl. Add the sliced veggies and broccolini to 1/2 of the bowl. Add tofu and edamame to the other 1/4 of the bowl. Repeat for 2nd bowl.
Add tamari, maple syrup and sriracha to a small bowl and mix until combined,
Add the sauce to the top of the bowls.
I like to garnish with black sesame seeds, nutritional yeast, pumpkin seeds, and cilantro. Enjoy!
