Strawberry Shortcake

It is strawberry season and for me that means strawberry shortcake must be eaten! This has been a favorite dessert of mine since I was a little kid and it still is! I promise my "shortcake" recipe is absolutely delicious!

Shortcake recipe:


1 cup almond flour

1.5 cups oat flour

1/2 TB baking powder

1/2 tsp salt

1/3 cup maple syrup

1/3 cup coconut yogurt

1/2 tsp vanilla

1/3 cup melted vegan butter

1 cup plant milk


  1. Preheat oven to 350F.

  2. Mix all dry ingredients together.

  3. Add wet ingredients, then mix everything together.

  4. Let sit for 5 minutes while you get out a loaf pan. Line it with parchment paper.

  5. Pour batter into loaf pan. Bake for 50-55 minutes.

  6. Take out & cool completely in loaf pan.

Slice strawberries and use coconut whipped cream to top it. Enjoy!
