Chocolate Walnut Banana Bread

This is such a healthy and delicious snack to make, especially when you have a few ripe bananas lying around. Perfectly crunchy and moist, it's also a crowd pleaser to take to parties or get togethers!



Ingredients:

For the wet ingredients:
  • 1 1/3 cups mashed very ripe banana (4 medium)

  • 2 tablespoons ground flaxseed

  • 1/3 cup any plant-based milk

  • 1/3 cup coconut oil, melted

  • 2 tablespoons pure maple syrup

  • 2 teaspoons pure vanilla extract

For the dry ingredients:
  • 1/4 cup coconut sugar (or any sugar works here)

  • 1/2 cup rolled oats

  • 1 teaspoon baking soda

  • 1/2 teaspoon baking powder

  • 1/2 teaspoon salt

  • 1 1/2 cups oat flour (oats blended in blender)

  • 1/2 cup chopped walnuts (optional)

  • 1/2 cup dairy-free chocolate chips (optional)


Directions:

  1. Preheat the oven to 350°F. Lightly spray a 9x5-inch loaf pan with oil or use parchment paper and set aside.

  2. In a large bowl, mash the banana until almost smooth (measure & make sure you have 1 1/3 cups).

  3. Stir the wet ingredients into the banana until combined.

  4. Stir the dry ingredients (besides walnuts & chocolate) into the wet mixture. Then stir in the walnuts & chocolate chips.

  5. Add mixture into the loaf pan and spread evenly. Add extra walnuts on the top and press down lightly into mixture (optional).

  6. Bake the loaf, uncovered, for 55 minutes, until lightly golden and firm on top. The top of the loaf should slowly spring back when touched.

  7. Allow to cool for 30 minutes before slicing & serving it. Enjoy!
