What I Eat in a Day in NYC (Vegan)

Chocolate Granola:

1 1/2 oats

1/3 chopped walnuts

2 TB cacao powder

1/2 tsp cinnamon

2 TB maple syrup

2 TB peanut butter

Mix everything together and bake for 15 min at 375F.

Tofu Marinade:

1/4 cup soy sauce

2 TB sriracha

2 TB maple syrup

Pumpkin Cheesecake Pastries:

1 sheet vegan puff pastry


1/2 cup Plain vegan cream cheese

2 TB powdered sugar


1/2 cup pumpkin puree

1 TB cornstarch

1 TB maple syrup

1/4 tsp pumkin spice

2 tsp canned coconut milk

Mix cream cheese & powdered sugar together. In a separate bowl mix pumpkin filling ingredients together. Roll out puff pastry and cut out circles. Add pumpkin filling then cream cheese on top and seal with another puff pastry sheet, press down edges with fingers. Bake for 25 minutes at375F.
