Vegan Katsu Curry recipe
Wagamama is one of our favorite restaurants and our favorite thing to order there is the vegan katsu curry - so decided to make a home version! This one satisfies the cravings for sure.

Ingredients:
Curry Sauce
-15 oz can coconut milk
-1 cup veggie broth
-1.5 tbsp of flour
-1 tbsp curry powder
-1/2 tsp garam masala
-3/4 tsp salt
-1/2 tsp sugar or maple syrup
-1 tsp soy sauce
-1 tsp tomato paste
-1/2 tsp garlic powder
Other
-1 cup Italian bread crumbs
-1 package Extra firm tofu, sliced
-2 cups cooked brown rice
-2 cups steamed veggies
-Vegetable oil for frying
Instructions:
Combine all curry sauce ingredients in a pot on the stove. Whisk until all incorporated. Bring to a boil. Then turn off heat.
Place 1 cup of curry sauce in a shallow dish. Place breadcrumbs in another shallow dish.
Heat a shallow pan of vegetable oil on the stove. Dip sliced tofu in curry sauce then bread crumbs and add to oil. Cook for 3-5 minutes each side.
Fill a bowl with rice and veggies then add the tofu and sauce. Enjoy!
