Vegan Gingerbread Cookies & Egg Nog recipes

It's Christmas time and that means a lot of delicious desserts and drinks to be had! Here are two of my favorite recipes for the Holidays.

Ingredients: 1/4 cup Vegan Butter 1/2 cup Brown Sugar 1/3 cup Molasses 1 TB chia seed + 3 TB water (or use flax)

2 cups All-purpose flour 1 tsp Baking soda 1/4 tsp Salt 2 tsp Ground ginger 2 tsp Ground cinnamon 1/4 tsp Allspice 1/4 tsp Ground cloves

Frosting: 1 cup Powdered sugar

1 Tbsp Plant Milk


Instructions: 1. Preheat oven to 350F. 2. Add butter and sugar to a bowl and using a hand mixer, cream together. This may take awhile to get smooth. 3. Add molasses and chia seed mixture to the bowl and mix together. 4. Next add all the dry ingredients into the bowl and mix together until forming a sticky dough ball.

5. Put dough on a floured surface and roll out until 1/4" thick.

6. Using a Gingerbread cookie cutter, cut out your people until no dough is left. Place on parchment paper lined baking sheet. Bake for 15 minutes.

7. Allow to cool completely before decorating. Add the powdered sugar and milk to a bowl and whisk with a fork until thick.

8. Fill a ziploc bag full of the frosting and cut off the corner to use as a piping top. Decorate as you'd like!



Vegan Egg Nog

Ingredients: 1 can of coconut milk 1/2 cup raw cashews, soaked overnight

1/4 cup water 3 TB maple syrup 1/2 tsp pumpkin spice blend Ice Cubes

Garnish: Sprinkle of cinnamon


Instructions: 1. Add all ingredients to a blender & blend until smooth. 2. Pour over ice and top with a sprinkle of cinnamon.
