Vegan Creamy Carbonara recipe

One of my favorite recipes of all time is this pasta. We make this dish probably about once a week. It's a creamy, delicious and filling meal that

Ingredients: 1 package brown rice pasta (I used fettuccine)

1/2 head of cauliflower, chopped 3 garlic cloves, peeled 1/2 cup cashews 1 1/2 cups boiling water 1/4 cup nutritional yeast salt & pepper to taste 1 cup peas 1 package vegan bacon, cooked 2 vegan chicken cutlets, sliced

Instructions: 1. Bring a large pot to boil and add all the pasta. Cook per instructions. Strain and set aside.

2. Bring a large pot to boil and add the chopped cauliflower and garlic cloves. Boil for 8 minutes. 3. Add cashews and water to a blender and blend until liquid. 4. Add boiled cauliflower & nutritional yeast to the cashew milk and blend until smooth.

5. Add salt & pepper to taste. 6. Take a pan and cook the vegan bacon alongside the sliced vegan chicken cutlets.

7. Cut the vegan bacon into small pieces. 8. Add cream sauce, peas, chicken, and bacon to the pasta & stir. Enjoy!
