Vegan Cookie Dough Ice Cream recipe
This recipe requires a small amount of prep, but super easy to make and so delicious! This has been our new favorite dessert to make!
This recipe is for 2 servings.
4 frozen bananas
1/4 cup any plant milk (we used coconut)
Cookie Dough Bites:
2 TB oat flour (grind oats in blender to make flour)
1/4 cup peanut butter
2 TB maple syrup
3 TB chocolate chips
1 TB cocoa powder
2 tsp maple syrup
1 TB water
Peel 4 bananas and add them to a plate, freeze them in your freezer overnight.
Add all the cookie dough ingredients to a bowl and stir with a fork until it becomes thick. Then roll tiny little balls of the dough with your hands to form bites. Add to a small plate. Put in freezer overnight.
The next day add bananas + plant milk to a blender and blend until thick like ice cream like (you may need to add more plant milk if it's not blending properly.
Pour ice cream into two bowls. Add the cookie dough bites.
Mix the chocolate sauce ingredients in a small bowl then top both ice creams with it. Enjoy!
