Tofu Fried Rice recipe

This is the most budget-friendly & easy vegan recipe there is! It takes almost no time at all and you really only need to buy 3 things at the grocery store: brown rice, a bag of mixed veggies, and tofu.


Ingredients:

1 package tofu, cubed (optional)

1 cup mixed veggies, rinsed

Any other veggies you have lying around

2 cups cooked brown rice


Sauce:

1/4 cup soy sauce

2 TB maple syrup

1 TB sriracha


Garnish:

Cilantro

Green onions, sliced


Instructions:

  1. Add cubed tofu to a non-stick pan and fry until most sides are browned. Set aside.

  2. Put mixed veggies (and any others you have on hand) into the pan and cook for about 2 minutes.

  3. Add the cooked brown rice into the pan, plus the sauce ingredients and add back in the tofu. Cook for an additional 2-3 minutes or until sauce is incorporated. Garnish however you like. Enjoy!
