Tempeh Reuben Sandwich recipe - SO good!

I wanted a meal to make that involved this new turmeric sauerkraut I bought, and then I remembered reuben sandwiches! And omg, when I whipped this together it was like heaven in the mouth. This is a MUST try! It tastes better than it looks, lol.

Serves: 2


1 package tempeh

1/2 cup sauerkraut

4 slices of bread

2 vegan cheese slices

tempeh marinade:

1/4 cup soy sauce or tamari

2 TB maple syrup

1 tsp smoked paprika

2 TB liquid smoke

sandwich sauce:

1/2 cup vegan mayo

1/4 cup ketchup

1 TB relish

1/2 tsp parika

salt & pepper to taste


  1. Slice tempeh in half, then slice those slices in half lengthwise to make the tempeh thinner. Mix up the marinade ingredients and add the slices to a shallow dish to marinade for 10 minutes.

2. Add all the sauce ingredients together, set aside.

3. Add tempeh slices to a skillet and grill until each side is browned. Set a slice of vegan cheese on top to melt, turn off heat.

4. Toast the slices of bread and spread a good amount of sauce on each side. On one side add the 1/4 cup (or whatever amount you like) of sauerkraut. Add the tempeh with cheese and put together.

5. Serve with homemade fries or chips. Enjoy!
