Super EASY Quinoa Stuffed Bell Peppers

These are super healthy, filling and delicious! You can use any type of bell peppers you have on hand.


4 large bell peppers

1 cup cooked quinoa

1/2 cup salsa

2 tsp cumin powder

2 tsp chili powder

2 tsp garlic powder

1 can of black or kidney beans, drained & rinsed

1 cup corn kernels (I used frozen)

salt & pepper to taste

Optional Toppings:


Green onions



Cashew Cream

Cashew Cream recipe:

1 cup cashews

1/2 cup water

1 tsp apple cider vinegar

salt & pepper to taste

Blend in a blender until smooth.


  1. Preheat oven to 375F.

  2. Add everything but the bell peppers to a bowl & mix to combine.

  3. Half each bell pepper and clean out the centers.

  4. Get a 9X13 pan and line with parchment paper.

  5. Add each pepper half to the bottom of the pan and fill with the filling.

  6. If you have any extra filling just stack on top of stuffed peppers, the more the better!

  7. Top with vegan cheese shreds.

  8. Add foil to the top of the pan and bake for 20 minutes. Then take foil off & bake for another 20 minutes.

  9. Top with any toppings you like & enjoy!
