Soyrizo Fiesta Bowl

I love this bowl because it's so flexible with what you put in it. You could honestly add any veggies you want and any sauces you like, and it'll still be tasty! I buy my soyrizo at whole foods next to the tofu.


Serves: 2


Ingredients:

1 pepper, sliced

1 onion, sliced

1/2 package of soyrizo

1/4 cup lettuce, chopped

8 cherry tomatoes, halved

1/4 cup red cabbage, chopped

1-2 cups brown rice cooked


Optional Toppings:

Guacamole

Cashew Cream

Cilantro


Cashew Cream recipe:

1 cup cashews

1/2 cup water

1 tsp apple cider vinegar

salt & pepper to taste

Blend on high until creamy. Save leftovers in airtight container.


Instructions:

  1. Add soyrizo to a pan & cook until browned. Set aside.

  2. Using the same pan add the peppers & onions. Add bits of water to deglaze the pan. Cook until slightly softened.

  3. Add cooked rice, soyrizo, peppers & onions, and any toppings you'd like to a bowl. Top with hot sauce & enjoy!
