Mushroom Stroganoff

Warm, comforting and filling, this is a favorite when the weather starts getting colder!

Ingredients: 1 TB olive oil 1 onion, diced 2 cloves garlic, minced 1 package mushrooms, sliced

1 tsp dried parsley 1 tsp paprika 1 cup veggie broth 1 tsp soy sauce 1/2 can of coconut milk

1/2 cup nutritional yeast

Garnish: Green onions, sliced


  1. Add olive oil and onion to a pot. Cook until softened, about 3 minutes. Next add in the mushrooms and garlic, cook for 5 more minutes.

  2. Next add in the seasonings and cook for 1 minute. Then pour veggie broth, soy sauce, and coconut milk in. Sprinkle nutritional yeast on top and mix in.

  3. Once the mixture reaches a boil, bring down to a simmer. Cook until thickened, add in more nutritional yeast if needed.

  4. Serve with mashed potatoes and garnish with green onions. Enjoy!
