Lemon Blueberry Loaf (SO good!)
I made this delicious loaf (let's be real, it's cake!) and it didn't last even one day. Fresh and warm from the oven, oh it does down so easy. I love this because it's decently healthy and the perfect summer treat.
2 cups oat flour (blend oats in a blender to make)
2 tsp baking powder
1/2 tsp salt
1 1/2 cups blueberries (or blackberries as I used this time)
1/2 cup melted vegan butter (or coconut oil)
3/4 cup maple syrup
1 1/3 cup vegan yogurt (or applesauce)
1/4 cup lemon juice
1 TB lemon zest
1 tsp vanilla extract
1 1/3 cups powdered sugar
2 TB lemon juice
Preheat oven to 350F. Line a loaf pan with parchment paper.
Add all dry ingredients to a bowl. Softly fold in the blueberries.
Add all wet ingredients to a separate bowl.
Add dry ingredients to the wet ingredients and stir until combined. Don't overmix or it will be super dense. Batter should be thick.
Pour batter into loaf pan. Top with additional blueberries for decor.
Bake 50-60 minutes or until toothpick inserted comes out clean. Let cool for 20 minutes.
Mix the glaze ingredients together and pour on top of the loaf. I then topped mine with more lemon zest.
Cut into slices and enjoy!
