Indian Butter ‘Chicken’ recipe
Absolutely one of our favorites. Super cozy and definitely filling.

Ingredients:⠀
1 block tofu, cubed⠀
⠀
5 cloves, minced⠀
1 large onion, diced⠀
1/4 cup cashews⠀
1 can diced tomatoes ⠀
1/4 cup tomato paste⠀
1/2 TB maple syrup⠀
1 can coconut milk⠀
1.5 TB Garam Masala ⠀
1.5 TB ground Coriander⠀
1.5 TB ground Cumin⠀
1 tsp salt⠀
1/2 tsp cayenne pepper⠀
⠀
Instructions:⠀
1. Grill tofu on a pan with some olive oil until crispy on most sides. ⠀
2. Sauté garlic & onions until browned on a separate pan. ⠀
3. Add sautéed garlic & onions + the rest of the ingredients into a blender and blend until well blended. ⠀
4. Add the curry sauce to a pot with the tofu and simmer for 10 minutes. Serve with naan (mine is homemade), rice & cilantro. ⠀
