Healthy Peanut Butter "Reese" Eggs
When I was younger I LOVED when Easter would roll around and Reese's would release their candy peanut butter eggs. I loved how much peanut butter there was and less chocolate. Well now I found a way to make not only a healthier version, but a tastier one too!
1/2 cup peanut butter
2 TB maple syrup
2 TB + 1 tsp coconut flour (or almond flour)
1/2 cup vegan chocolate chips
Sprinkle of seat salt
Mix peanut butter, maple syrup, and coconut flour together in a small bowl.
Form the mixture into little eggs and press flat. Line a plate with parchment paper & set them all down. Pop in the fridge for 15 minutes to harden.
Next melt the chocolate in the microwave at 30 sec intervals until melted (took me 1 minute total).
Dip the eggs in the chocolate and cover to coat. Set back down on the parchment paper.
Sprinkle sea salt on top of the chocolate covered eggs.
