Falafel Mediteranean Bowl

To make this bowl extra quick, you can just add pre-made hummus, baba ganoush & falafel. So tasty and fresh, this bowl really hits the spot!

Serves: 2


1/2 box of falafel (I get the mix where you just add water from whole foods. If you want to make homemade falafel, here is a good recipe: https://www.pickuplimes.com/recipe/baked-green-pea-chickpea-falafels-59)

Lettuce (I used butter lettuce to make wraps)

1-2 cups cooked brown rice

1/2 red bell pepper, chopped

1/4 red onion, chopped

2 inches of cucumber, chopped

kalamata olives

scoop of hummus

scoop of baba ganoush

dill pickles

parsley, chopped



  1. Make falafel per box instructions.

  2. Add cooked rice, then veggies & falafel to a bowl.

  3. Top with whatever toppings you'd like.

  4. Squeeze with lemon juice or add hot sauce.

  5. I like to eat mine with the butter lettuce like little tacos. However you like it, enjoy!
