Energy Balls recipe

These are the PERFECT snack for any time, on the road, or at Walt Disney World (where I just went!). They give you the energy you need and help satiate you until your next meal. These are my go-to snack.

Makes: 12-15 Balls

1 cup oats

1 cup nuts (can be anything, I used almonds & walnuts)

2 TB ground flax seeds + 3 TB water

1 cup dates, pitted

2 TB maple syrup

1 tsp vanilla extract

1/3 cup dried fruit (I used cranberries & blueberries)

1/4 cup dairy-free chocolate chips

1/4 tsp cinnamon

  1. Add flax seeds with water, set aside.

  2. Add dates to a food processor, pulse until made into bits.

  3. Add the nuts and pulse until bite-sized.

  4. Add the oats, flax water, maple syrup, vanilla extract, dried fruit, cinnamon & chocolate chips.

  5. Pulse until just combined, but not too much so that everything is mixed & tiny.

  6. Using your hand form bite-sized balls. Once finished, add to a plate & refrigerate for at least 30 minutes. Enjoy!
