Creamy Zucchini Pasta recipe

This pasta is soooo delicious and filling. Every single person in my family (vegan or not) loves this recipe!


1/2 head cauliflower, torn into smaller pieces

3 garlic cloves, de-shelled

1/2 cup cashews

1 1/2 cups boiling water

1/4 cup nutritional yeast

salt & pepper to taste

1 box of pasta

1 zucchini, spiraled

chili flakes (optional)


  1. Bring a large pot of water to boil. Add in cauliflower & garlic cloves. Boil for 10 minutes, then strain.

  2. Bring another large pot of water to boil and add in pasta. Cook per instructions on the box. Then strain and rinse with cold water.

  3. In a blender add cashews and boiled water, blend until smooth like milk. Add in boiled cauliflower, garlic cloves & nutritional yeast. Blend until smooth and creamy.

  4. Add creamy sauce into a saucepan and re-heat. This is the time to add your salt & pepper.

  5. Add pasta and zucchini noodles to the sauce and stir together. Top with chili flakes. Enjoy!
