Creamy Butternut Squash Pasta recipe

This is like a Fall version of Mac n' Cheese. It's creamy, filling and delicious! This recipe is a MUST if you like pasta.


2 cups cooked butternut squash

1/2 cup cashews, soaked

1/2 cup buffalo sauce

1/4 cup plant milk

1/4 cup nutritional yeast

1 package brown rice pasta


  1. Peel and chop butternut squash into cubes. Boil in hot water until tender, about 10 minutes. Meanwhile soak cashews in boiling water.

  2. Bring a pot of water to boiling and add pasta. Cook per instructions.

  3. Strain the butternut squash and cashews then add to a blender. Add all other ingredients (besides pasta) to blender. Blend until smooth and creamy.

  4. Strain pasta and add back to the pot. Add the creamy sauce to the pasta and stir together. Serve with vegan parmesan. Enjoy!
