Butternut Squash Soup recipe
Cooler temperatures are coming and that means one thing - soup! This is one of my favorites because it’s filling, delicious, and super EASY!🍂⠀

Ingredients:⠀
1 butternut squash, peeled & cubed⠀
2 onions, chopped⠀
4 garlic cloves, peeled⠀
4 cups veggie broth⠀
2 tsp cumin⠀
2 tsp chili powder⠀
Salt & pepper to taste⠀
⠀
Garnish:⠀
Avocado, diced⠀
Tomato, diced⠀
Olives, diced⠀
⠀
Fresh bread⠀
⠀
Directions:⠀
1. Preheat oven to 350F.⠀
⠀
2. Add cubed butternut squash, onions and garlic cloves to a pan. Roast for 45-60 minutes until starting to brown.⠀
⠀
3. Once veggies are roasted add them to a blender along with broth & seasonings. Blend until smooth and creamy.⠀
⠀
4. Add soup to a pan to warm. Serve with any garnish & fresh bread. Enjoy!
