Butternut Squash Soup recipe

Cooler temperatures are coming and that means one thing - soup! This is one of my favorites because it’s filling, delicious, and super EASY!🍂⠀

Ingredients:â €

1 butternut squash, peeled & cubedâ €

2 onions, choppedâ €

4 garlic cloves, peeledâ €

4 cups veggie brothâ €

2 tsp cuminâ €

2 tsp chili powderâ €

Salt & pepper to tasteâ €

Garnish:â €

Avocado, dicedâ €

Tomato, dicedâ €

Olives, dicedâ €

â €

Fresh breadâ €

â €

Directions:â €

1. Preheat oven to 350F.â €

â €

2. Add cubed butternut squash, onions and garlic cloves to a pan. Roast for 45-60 minutes until starting to brown.â €

â €

3. Once veggies are roasted add them to a blender along with broth & seasonings. Blend until smooth and creamy.â €

â €

4. Add soup to a pan to warm. Serve with any garnish & fresh bread. Enjoy!
