Blueberry Crumble Muffins

These are always a hit! Healthy & Delicious plus packed with blueberries, how can you go wrong?


Ingredients:

Crumble:

1/4 cup oat flour

1 TB maple syrup

1/2 TB almond butter

1/4 tsp cinnamon

pinch of salt


Muffins:

1/2 TB soft coconut oil

1 3/4 cup oat flour

1/2 TB baking powder

1/4 tsp baking soda

1/8 tsp salt

1/4 cup apple sauce

1 TB almond butter

1/2 tsp apple cider vinegar

1/2 tsp vanilla extract

1/3 cup maple syrup

1/3 any plant milk (I used soy)

1 cup frozen blueberries


Instructions:

  1. Preheat oven to 375F. Add muffin liners or grease a muffin pan.

  2. Add the crumble ingredients (into a crumble) then set aside.

  3. Add all muffin ingredients (minus blueberries) & mix. Next fold in the blueberries.

  4. Pour batter into the muffin pan then add crumble on top & press in.

  5. Bake for 18 minutes, then remove from oven. Once cooled, enjoy!
