Baked Oatmeal Recipe

This is a great breakfast to take on a road trip or vacation. It's delicious, super filing, and doesn't fall apart!

Ingredients:

1 TB ground flax + 3 TB water

2 ripe bananas

1.5 cups any plant milk

1 tsp vanilla extract

2 cups oats

2 tsp cinnamon

1 tsp baking powder

1/2 tsp salt

1/3 cup nut of choice (pecan, walnut, etc)

3/4 cup frozen blueberries

3/4 cup frozen strawberries (or mango, whatever you have)

Maple syrup


Instructions:

  1. Preheat oven to 350F.

  2. Mix ground flax with water in small dish, set aside.

  3. Grease a 9X13in baking dish. Set aside.

  4. Smash bananas in a large mixing bowl. Add milk & vanilla, stir to combine.

  5. To the same bowl add oats, cinnamon, baking powder, salt & nuts. Stir to combine.

  6. Fold in frozen berries.

  7. Pour mixture into baking dish & put in oven. Bake for 40 minutes.

  8. Once cooled, drizzle some maple syrup on top. Enjoy!
