Vegan Bahn Mi recipe

These sandwiches are great for on the go and super simple to make!

Ingredients:

1 package extra firm tofu

2 Baguettes


Tofu Marinade:

1 TB olive oil

2 TB soy sauce

1/2 lime juiced

3 garlic cloves, minced

2 tsp sriracha

2 tsp raw sugar


Toppings:

Pickled Veggies

Cilantro

Sliced Avocado

1 red chili, sliced

1 tomato, sliced

Vegan Mayo

Sriracha


Instructions:

  1. Preheat oven to 350F.

  2. Drain tofu and slice into 1/2" pieces. Place on a towel and dab, then let sit for 10 minutes.

  3. In a bowl whisk together marinade ingredients, add tofu to marinade and allow to sit for 15 minutes, flipping over once.

  4. Add tofu to a greased pan and bake for 20 minutes or until crispy.

  5. Assemble sandwich with tofu, toppings and sauces. Enjoy!
