Tofu Scramble Breakfast Burrito recipe

These are great for road trips, camping, and every day. So filling and tasty!⠀

Servings: 4


Ingredients:

1 block tofu

1 red bell pepper, diced

1 onion, diced

1 tomato, diced

1/2 tsp salt

1/4 tsp pepper

Handful of Vegan cheddar cheese

1/2 avocado sliced

Handful of spinach

Tortilla wrap


Instructions:

  1. Sauté peppers & onions on a pan with a little olive oil. Then crumble the tofu and add to the pan and warm for 3-4 minutes.

  2. Add the diced tomato and seasonings. Next add the cheese.

  3. Warm a tortilla on a separate pan and add the scramble to it. Top with avocado and spinach then wrap up and grill for a few minutes until browned.

  4. Serve with hot sauce or taco sauce. Enjoy!
