Pumpkin Coffee Cake recipe ⬇️


Ingredients:

1/4 cup maple syrup

2 TB sugar

1 cup pumpkin puree

1 TB flax meal

1 cup almond flour

1/2 cup oat flour

1 TB corn starch

3 tsp pumpkin pie spice

1.5 tsp baking powder

1/2 tsp salt


Crumble:

2.5 TB brown sugar

3/4 tsp cinnamon

2 TB almond flour

1/8 tsp salt

1 tsp maple syrup


Instructions:

1. Preheat oven to 350F.

2. Mix all wet ingredients.

3. Mix all dry ingredients, then add to wet ingredients. Combine to make thick batter.

4. Add mixture to a greased or parchment lined loaf pan or brownie pan.

5. Mix crumble ingredients. Spread on top of mixture.

6. Bake for 30 minutes, or until a fork comes out clean. Then cool for 10 minutes before serving.
