BBQ Jackfruit Sandwich recipe


This is my favorite BBQ recipe. It tastes exactly like a pulled pork sandwich, but way less prep & cook time. SO good, even non-vegans will love!


Servings: 4


Ingredients:

4 cans jackfruit

Toasted buns


Marinade:

1/4 cup liquid smoke

1 cup bbq sauce


Cole Slaw:

1 pack cole slaw salad mix

1 pack cole slaw seasoning mix

3/4 cup vegan mayo


Toppings:

Avocado, sliced

1/4 red onion, sliced

Banana peppers

BBQ sauce

Vegan mayo


Instructions:

  1. Take jackfruit out of the can then drain & rinse. Then fill a bowl with water and allow jackfruit to soak for minimum 2 hours. Then drain & rinse again.

  2. Peel jackfruit so that the hard part and seeds are taken out, then leave the pulled jackfruit parts.

  3. Add marinade ingredients to jackfruit and allow to sit for 15 minutes. Preheat oven to 425F.

  4. Grease a pan then add a thin layer of jackfruit, bake for 30 minutes or until the outside jackfruit starts to crisp.

  5. To make the Cole slaw, just add everything to a bowl and mix.

  6. Top your sandwich with whatever toppings you would like. Enjoy!
