Indian Veggie🌱 Masala
Ingredients: 6 garlic cloves, diced 1 onion, diced 8oz mushrooms, sliced 1/2 head of broccoli 1 Carrot, sliced 1 can of chickpeas, drained 1 large jar of tomato sauce 1 can of diced tomatoes 2 cans of coconut milk Curry powder to taste Garam Masala Powder to taste Salt to taste Brown Rice
Instructions: 👉Sauté garlic & onions, add mushrooms, broccoli, carrots, tomato sauce, diced tomatoes, coconut milk, curry powder, masala powder, and salt. Bring to boil then simmer for 15 minutes. Make brown rice. Add chickpeas at the end, simmer for 3 more minutes. Serve on brown rice and garnish with cilantro.
